Why are my sugar cookies greasy and thin? Take them out of the oven right before they start to turn golden. It is also possible you overbaked the cookies. Make sure you use the exact amount of wet and dry ingredients and weight them with a kitchen scale. It is possible you did not weigh your flour and added too much. Here are some common issues and how to avoid/correct them: Why are my sugar cookies so dense? This process incorporates tiny air bubbles into your dough which help make it soft and light and trust me, it will make for a moister, softer cookie with a better texture. Creaming the wet ingredientsĪ lot of my recipes don’t require creaming of butter and sugar and egg – which I love because I am all for simple recipes that do not require a lot of steps and equipment – but to make the best chewy vanilla sugar cookies, you need to cream your butter and sugar until it is light and fluffy, and keep creaming once you add the egg. Also, cold dough will take up more time in the oven to warm up before it starts to bake, which means the center of your cookies will be a little less cooked (lets even say slightly underbaked) and hence perfectly soft and chewy. Why is that important? Because if your dough is too warm and soft when it goes in the oven, it spreads too fast and you could end up with a cookie that is too flat and worst case greasy. Chilling your dough will solidify the butter and firm up your dough. I don't know.I know, opinions really differ on this one, and lots of recipes do not require the cookie dough to be chilled before baking. I had no trouble with them being too crumbly to shape maybe because I used softened butter. When I make them again, I'll use even less sweetener in the cookies, and maybe I'll add an egg, to ameliorate the sandy texture, and make them more smooth. I powdered some splendid in my 1 cup mini food processor, for the frosting, and added less than 1/8 teaspoon of xanthan gum, to give it a little stability. (I assumed that's what the gelatin was for, but I used that, too. Also, I am NOT glucose intolerant, so I added 1 tablespoon of vital wheat gluten, to give the cookies a little extra body. I had monk fruit/erythritol sweetener, which I don't really like, so I used splenda that measures just like real sugar, and as every recipe with artificial sweetener in it tastes way too sweet to me, I used half of the equivalent amount. Of course, since I'm a brat, I had to make some teensy (ahem) "adaptations": I used softened butter, because I used my stand mixer instead of my food processor. ![]() If I had used almond flavoring instead of vanilla, they would have tasted just like Swedish almond flavored spritz. ![]() (I use sesame seed flour instead, whenever I can) These cookies turned out great. Instead of the traditional method of cutting them out and them moving to the cookie sheet you need to remove the dough between the shapes. I decided to try this dough to make cut out sugar cookies. Yup! With Christmas coming I want to get a few dozen cookies into the freezer to pull out for when we decorate our tree, have family or friends over, or just want a treat along with a mug of hot chocolate. Then scoop the dough or make shapes with cookie cutters. Simply process the ingredients in a food processor for a minute or two until the dough comes together in a ball.
